INGREDIENTS

  • 30 g egg yolk
  • 30 g sugar
  • 200 g mascarpone
  • Ladyfingers
  • Coffee to taste
  • Cocoa to taste
  • Sicilian cannoli pod to taste
  • Candied orange zest to taste
  • Roasted pistachios to taste

PREPARATION

  1. Whip the yolk and sugar together. Add the mascarpone to the mixture using a scraper.

  2. Place the ladyfingers next to each other, then proceed with the creation of the desired shape using a pastry cutter (in this case a rectangular mould is used).

  3. Place the mould on the plate and proceed with the first layer of cut ladyfingers (cut according to the desired shape) and soaked in coffee. Crush the ladyfingers well and proceed with a layer of previously prepared cream.

  4. Crumble Sicilian cannoli pod and the candied orange cubes on the cream. Create a second layer of well-crushed ladyfingers; finish with a layer of cream and level the mould with a spatula.

  5. Prepare a separate icing using coffee, cocoa and granulated sugar (heating with a blowtorch or in a saucepan). Place the icing on top of the dessert and level again with the spatula.

  6. Once the tiramisu layers have been created, clean the plate and remove the mould.

  7. Decorate with a pastry bag and give the finishing touch with cannoli pods, orange zest and pistachios.
