INGREDIENTS

  • 54 g egg yolk
  • 69 g sugar
  • 250 g mascarpone
  • Ladyfingers
  • Coffee
  • Cocoa
  • Cinnamon
  • Dark chocolate
  • Quince pears jam

PREPARATION

  1. Prepare the base of ladyfingers soaked with bitter coffee. Arrange the quince pears jam on the ladyfingers.

  2. Prepare the mascarpone cream by adding sugar and yolk until everything is fluffy.

  3. Then add the mascarpone until you get a full-bodied mixture.

  4. With the pastry bag, cover the jam with the cream and sprinkle with cinnamon.

  5. Proceed with another layer of coffee-soaked ladyfingers and cover again with the mascarpone cream.

  6. Add more cinnamon and dark chocolate flakes, sprinkle with bitter cocoa and decorate to taste.
