
2023 Original Tiramisu
INGREDIENTS
- 250 g mascarpone
- 50 g egg yolk
- 53 g sugar
- 6 ladyfingers
- Coffee
- Cocoa to taste

PREPARATION
Beat the sugar and egg yolk in a mixer until it doubles in volume and becomes a light and silky cream.
Add the mascarpone (cold) to the cream. Work with an electric mixer until you get a smooth and compact cream. Set aside in a pastry bag with a spout of your choice.
Moisten the ladyfingers in coffee (unsweetened), without wetting them too much. Then cut the biscuits with a rectangular pastry cutter or with one of your choice.
Start the composition with a layer of biscuits, an abundant layer of cream, another layer of biscuits and finish with the remaining cream.
Remove the pastry cutter, complete with the cocoa powder and serve.
